A light golden vinegar built on true Champagne wine, oak-aged for a full year. Bright and elegant, with a gentle acidity and refined fruit-and-spice aromatics that make it a step up from everyday white wine vinegar.
Delicate and sweetly fruity with notes of pear and warm pie spice, a whisper of minerality, and soft, well-rounded acidity.
Mignonette for oysters; vinaigrettes (lovely with lemon olive oil and fleur de sel); marinades for ceviche or carpaccio; a splash to brighten sparkling-wine sauces.

Radiant rose-pink in the glass. Delicate, fruity sweet-and-sour aroma with red-grape lift; the palate is gently sweet and lightly tart, smoothed by oak-derived vanilla and a clean, not-too-acidic finish.

Medium-intense fruitiness with a herbaceous aroma, green-tomato and artichoke notes and a long, gently peppery finish.
