Favuzzi
Favuzzi was founded in 2001 by Michel Favuzzi, son of Italian immigrants, who began selling olive oil out of the trunk of an old car to fine-food stores in Quebec and Ontario while still a university student. From those basement beginnings in Laval the company grew into a respected Canadian importer of premium Italian foods and, more recently, a producer of its own line made in Italy. The lemon and pepper mayonnaise is made in Italy with fresh pasteurised eggs and high-oleic sunflower oil, balancing bright Sicilian lemon against the warmth of black pepper.

Earthy, woody and mushroomy, with the mild, gently nutty character of summer truffle — softer and less pungent than winter black or white truffle.

Rich, intensely savoury and umami-forward, led by rehydrated sun-dried tomatoes with a rounded sweetness, mellow garlic, herbal basil and a subtle nutty note from pine kernels and aged cheese.

Light, crisp and very thin, with toasty baked-bread flavour, a fruity backbone of extra-virgin olive oil and a gentle, rounded garlic warmth on the finish. Savoury but never aggressive.
