
Condimento Balsamico Rosé – Botte 6
A 100% natural rosé balsamic condiment from Modena, made entirely from red Ancellotta grapes and aged six years ("Botte 6" / 6 travasi) in oak barrels. Vacuum reduction during production preserves the bright, natural rose-pink colour you don't get from a conventional cooked balsamic, while the wood ageing layers in soft vanilla over a fruity sweet-and-sour core. Acidity sits around 4.3%, syrupy but bright rather than sharp.
Radiant rose-pink in the glass. Delicate, fruity sweet-and-sour aroma with red-grape lift; the palate is gently sweet and lightly tart, smoothed by oak-derived vanilla and a clean, not-too-acidic finish.
Drizzle over green and fruit salads, grilled or roasted vegetables, fresh and aged cheeses, fish and light poultry. Equally at home on the sweet side: spoon over vanilla ice cream, macerated strawberries and other fruit, or panna cotta. Its pale colour makes it a pretty finishing splash where dark balsamic would muddy the plate.

Casanova
Casanova 1748 is a family acetaia in Formigine, on the gentle Emilian hills just outside Modena, that has been cooking grape must and laying it down in wood for generations. The house takes its name and its romantic streak from Giacomo Casanova, the 18th-century adventurer who is said to have prized balsamic vinegar enough to hand it out as a gift. Today the family still presses selected local grapes, cooks the must slowly, and ages it through batteries of precious wood barrels before bottling each flask by hand. The Rosé is their playful counterpoint to the classic dark balsamic: instead of the usual cooked-down, mahogany-coloured must, it is built from red Ancellotta grapes and reduced under vacuum so the liquid never caramelises, keeping its luminous pink colour while it picks up vanilla and oak from six rounds of barrel ageing.
