Heartbeat Hot Sauce Co.
Heartbeat Hot Sauce Co. began in 2015 in Thunder Bay, Ontario, when its founders — then working in a restaurant — bought up the last of a local pepper farmer's crop and spent the fall and winter learning to ferment it as a way to preserve it. They fell for the red habanero, and word-of-mouth turned a home hobby into a full production company. Every sauce is still small-batch fermented, made with all-natural ingredients and no added water or preservatives, and developed, cooked, bottled and shipped from the South Core of Thunder Bay. Blueberry Habanero is a collaboration brewed with Forgotten Lake Blueberry Ale from a nearby brewery.

Earthy, woody and mushroomy, with the mild, gently nutty character of summer truffle — softer and less pungent than winter black or white truffle.

Rich, intensely savoury and umami-forward, led by rehydrated sun-dried tomatoes with a rounded sweetness, mellow garlic, herbal basil and a subtle nutty note from pine kernels and aged cheese.

Nutty, wheat-forward base from the germe di grano; a gentle, building chilli warmth rather than aggressive heat; faint earthy colour from red beet powder.
